Cranberry Lentil Salad

1 cup lentils

1/2 cup dried cranberries

1/4 cup parsley

1 tsp salt

1/2 cup walnuts

Joice of 1 small lemon

2 tbsp olive oil

Bring 1 cup lentils to boil in 4 cups water.  Reduce heat to a simmer, cover and cool 20 – 25 minutes.  Rinse with cold water.  Rold all ingredients in a bowl and stir to combine………Serve.
